Ideal Protein Approved Crock Pot Recipe

Harvest Chicken Stew (great for all phases)

2 cups chopped onion (phase 4 only) or leeks, sliced
2 cups cubed, cooked boneless chicken breast meat
1 cup chopped celery
2 cups diced tomatoes, with liquid
2 cups sliced carrots (phase 4 only)
5 cups low sodium chicken broth
1/2 cup mushrooms
1 cup turnip, diced
1 cup sliced zucchini
1 cup french style green beans
In a large soup pot, combine the onion, chicken, celery, green beans, tomatoes with liquid, carrots, broth, turnip, mushrooms and zucchini.
Stir together and simmer over medium low heat for 1/2 hour, or until vegetables are cooked and tender.
This recipe can also be put in the crock pot in the morning and left on high for the day to be served at dinner.
